Each comprehensive full-day hands-on workshop covers:

  • making your own sourdough leaven to harness the power of complex wild culture fermentation
  • kneading, shaping and prooving loaves in tins, cloth and baskets
  • a short history of baking and ovens, and how to get the most out of your oven
  • using different types of flour and milling your own
  • how to recognise well made bread
  • cooling and storing bread

What to wear

Comfortable summer wear - the bakery is always warm from the glow of our enormous 19th century wood-fired scotch oven. Closed toe, flat shoes.

Cancellation / Re-Scheduling Policy

Bookings may be refunded or moved to another available date up to two weeks before the date booked. Under two weeks no changes can be made.


Refund & Cancellation Policy

Anyone partaking in any classes or coming to any events at RedBeard Historic Bakery or organised by RedBeard Historic Bakery must agree to these terms and conditions.

1.) LIABILITY WAIVER

I agree to take on full responsibility for any damages, injuries and for physical and/or personal property, which I might incur whilst participating in classes and/or events organised by RedBeard Historic Bakery.

2.) PHOTO & VIDEO

I agree to give RedBeard Historic Bakery unrestricted publishing rights for any photographs or videos taken at RedBeard Historic Bakery classes and events or on RedBeard Historic Bakery's premises. (For use of RedBeard Historic Bakery marketing materials).

3.) REFUNDS / RE-SCHEDULING

Bookings may be refunded or transferred to another available date up to two weeks prior to the workshop date

Cancellations less than two weeks prior to the workshop date will only be eligible for a 50% refund of the total fee paid. No transfers are possible within this time frame.

If extra merchandise was purchased at the time of the original booking being cancelled, a full refund of the purchase price for the merchandise will be issued.

If an attendee does not attend a workshop they are enrolled in, they must advise our office through email (admin@trenthamnc.org.au) in writing beforehand, or no refund will apply.

Excellent course, helped to dispel a lot of commonly held beliefs in sourdough making, discussed the science and culture as well as lots of hands-on experience; John gets you doing everything from mixing to different shaping techniques and finally using the long peels to put the loaves in their very impressive Scotch oven! Highly recommend.

Almost everyone eats bread & drinks wine, but does that drive us to make our own bread and wine. While a minority of us will, others will seek out seminars & workshops to better understand the complexity of how the most delicious breads & wines are created. Yesterday my wife & I attended the most incredible & fascinating bread making 'hands on' workshop at RedBeard Bakery in Trentham. Starting at 10am, it ran through until 4,30pm stopping only for half an hour , with a delicious lunch provided...and unlimited coffees. Master Baker & Owner of RedBeard is John, a man of incredible knowledge & so much passion he shares about true artisan breadmaking. Wiser than his years, John led us all though an amazing hands on discovery of bread making going back over thousands of years. John's passion had him talking and explaining the creation of leaven, the true traditional cultivated yeast essential for breadmaking. & the health benefits of organic wholemeal flours to create stunningly delicious breads....of which all of us in the small class of four made several different types of loaves. We took home at least 20 loaves which all of our neighbours loved. Making artisan organic bread at home is a time consuming passion, and like wine making it is complex.....however gaining an understanding how real stoneground wholemeal breads are made is truly a wonderful way to spend a day with passionate John. He will take you back in time to the historic origins of breadmaking. Add to this the hands on experience of making your own leaven, kneading and preparing your own bread dough, then baking your own loaves into their 1880's original woodfired oven, then enjoying the bread you made is a fantastic experience. I can highly recommend the RedBeard Bakery workshop in Trentham as a day to remember, and well worth the cost!

This was one of the best workshops I have ever attended. John is incredibly passionate about his craft and provides you with an abundance of information including the history, science and skill of this old passed down tradition. John is so encouraging of each participant and you get to experience every aspect of the craft. We were looked after from the moment we arrived by the wonderful, kind and happy staff. We were provided with delicious baked morsels throughout the day and a sensational lunch. We walked away from the day with an abundance of baked breads and other goodies. We were full of information and left feeling so contented. It was above and beyond my expectations I couldn't have expected anything more. Such a wonderful experience at such a historic venue and town.
